Dice 2 cloves of chopped shallots, 2 cloves of chopped garlic,1 cup coconut milk,
2 TBS of Eastern Blue Red Curry paste. Pepper to taste.
Bring to a boil (about 3 mins.)
Add mussels, close the lid and wait until they open.
